Ultimate Greek Seasoning for a Mediterranean Meal

Greek food, and Mediterranean food in general, is bright and flavorful. It includes lots of bright flavors that go well with a variety of meats and veggies. The basis of the flavors can be achieved with just a few seasonings to make a spice blend that creates most greek cuisine. This spice blend is perfect to make a marinade, a salad dressing, or to sprinkle over veggies you want to roast. It’s so easy to make and have prepared ahead of time!

Homemade Greek Style Seasoning Blend

It can’t really get much easier than measuring herbs, stirring them up and storing them in a jar. If you want to get a little more complicated, you could grind the mix up in a coffee grinder.

I like to grind my Greek seasoning blend any time I use the optional thyme or rosemary. Those two herbs just aren’t pleasant to get stuck in your teeth. But if you don’t use those herbs, or if you don’t mind the larger chunks of herbs, just skip the grinding!

Oregano for a Bold, Earthy flavor

There are several different types of oregano. If you grow it fresh, you can experiment with different varieties. The oregano that you usually buy in the store is an Italian variety, but still makes delicious greek seasoning.

The oregano has an earthy flavor that pairs wonderfully with citrus. Many of the recipes where I use this seasoning also contain lemon juice!

Garlic to add Warmth

There’s no such thing as too much garlic, right? You can’t go wrong with garlic. It is spicy and flavorful. It gives the seasoning a wonderful aroma.

I like to use granulated garlic because it helps the seasoning blend to coat the meat or veggies. The herbs tend to stick in clumps and not fully coat the meat or veggies. So, using the garlic powder helps give the seasoning blend a better consistency that will spread easily. 

Salt and Pepper for a Good Basis

The king and queen of the midwest, right? No recipe is complete without salt and pepper. If you’re looking to really take it up a notch with flavor, try a Baja gold salt and white pepper! 

Optional Herbs for a Twist on Mediterranean Style

These 4 herbs are optional in my recipe. The recipe is still delicious without them. If your spice cabinet doesn’t contain these less popular herbs, just skip them. But if you ave them on hand, try them in this seasoning blend! You won’t regret it!

The marjoram gives a slightly licorice flavor- I know it doesn’t sound good, but it adds so much depth to the flavor. The tarragon gives a sweetness to help balance out all the earthy flavors. Thyme and rosemary are excellent aromatics. I tend to add these particularly if I’m making chicken or roasted potatoes. 

The Recipe for the Seasoning Blend

I’ll write this out with teaspoons and tablespoons, but I either eyeball it, or make it in bulk. Mix the following ingredients together, then store in an airtight jar:

  • 2 tsp garlic powder
  • 2 Tbs oregano
  • 2 tsp salt
  • 1 tsp pepper
  • 1/2 tsp rosemary (optional)
  • 1/2 tsp thyme (optional)
  • 1/2 tsp marjoram (optional)
  • 1/2 tsp tarragon (optional)

How to use this Greek Seasoning Blend

I usually make an entire greek inspired meal. I’ll marinate chicken and bake or grill it. Then I’ll roast potatoes. And we have a cold tomato salad tossed in a vinaigrette. I have complete recipes for those, but here’s the basic idea.

Greek Chicken Bites with a Marinade

Mix 1/2 cup greek yogurt, the juice of 1 lemon, 1/2 cup olive oil and 1-4 tablespoons of the greek seasoning blend. Then, coat 2-4 pounds of chicken breast or things in the marinade and let them rest all day.

Lay them out on a sheet pan, not touching one another. Bake at 400ºF until the edges turn crispy and brown. Optional- instead of baking, you could grill your chicken.

Greek Style Roasted potatoes

Cube yellow or red potatoes into bite size pieces or wedges. Place them into a casserole dish. Add 1/2 cup chicken stock, juice of a lemon and 2 tbsp of the greek seasoning.

Cover and bake at 400ºF for half an hour. Remove the lid and bake until the potatoes are soft. If you like a bit of crispy edges, broil the potatoes for last 2-3 minutes.

Greek tomato salad

Slice a container of cherry or grape tomatoes in half. Dice red onion into bite size pieces. Combine in a bowl, then toss with a vinaigrette made from equal parts olive oil and red wine vinegar. Add the greek seasoning to taste. This tastes best if made ahead of time and left in the fridge to marinate all day.

I’m confident you will LOVE this seasoning blend. Just recently, I catered a breakfast and lunch spread for a bridal party. The breakfast portion was all sourdough pastries, but lunch was Mediterranean style. I served them chicken salad sourdough pitas, a veggie tray with tzatziki dip, greek chicken bites and greek roast new potatoes. Everyone absolutely raved over everything. Ingredients
  

  • 2 tsp garlic powder
  • 2 Tbsp dried oregano
  • 2 tsp salt
  • 1 tsp black pepper
  • 1/2 tsp dried rosemary optional
  • 1/2 tsp dried thyme optional

Instructions
 

  • Measure all dried spices into a bowl. Stir until mixed.
  • If using rosemary or thyme, pulse in a spice grinder for a finer texture.
  • Transfer the mix to an airtight jar. Label with date. Store in a cool, dark place up to 6 months.

Notes

Use 1–2 Tbsp of this blend per pound of meat, or 1–2 tsp per 1–2 cups of salad dressing.
Grinding optional herbs gives a smoother texture and prevents big bits.
