I came up with this recipe on whim because my husband loves strawberry banana smoothies. I knew I could make a healthier version with no added sugar. When a popsicle is homemade, you can really sneak in some extra nutrition. This recipe is so simple, packed with nutritious goodness, and the kids loved it. Simple Summertime Treat

It’s hot where we live. Hot and humid. That’s why a frozen treat is perfect for the kids to cool off after playing outside. Store-bought popsicles can be expensive and are full of sugar, usually. These strawberry banana popsicles took about 2 minutes of prep time, 4 hours of freeze time, and contain flax meal, sunflower lecithin, and could easily hide some protein powder.

Simple Ingredients

All of the ingredients for this recipe are simple Whole Foods. The strawberries and bananas provide the flavor and the sweetness. Be sure that bananas are nice and ripe. The heavy cream makes this recipe feel luxurious. It’s creamy and satisfying. All that extra fat will keep your kids’ bellies full for a long time!

Flax seeds are a nutritional powerhouse packed with fiber, omega-3 fatty acids, and lignans. They are a good source of protein and various minerals like magnesium, manganese, and iron. And because the strawberry seeds are already in the recipe, the flax seeds practically disappear! No one will notice that your strawberry banana popsicles are full of extra seeds.

Sunflower lecithin is a nutrient-rich substance extracted from sunflower seeds, primarily composed of phospholipids like phosphatidylcholine, phosphatidylinositol, and phosphatidylethanolamine. It’s a source of choline and essential fatty acids and is often used as an emulsifier in food and supplements. Using lecithin will help everything blend together smoothly and provide extra nutrients.

Simple Popsicles Preparation

This recipe is so incredibly simple. In fact, it almost seems silly to write a recipe for it because it’s essentially strawberries and bananas. But… I know somewhere out there, a mama is looking for a quick and easy popsicle recipe that you don’t have to think about. So, I tested this one out so that you don’t have to. And let me tell you, it’s a winner all around.

All you need to do is throw all of the ingredients in the blender. Then simply blend til smooth. Just pour it straight into the molds. Then pop it into the freezer and freeze for 4 hours. Last, pop them easily out of the popsicle molds and watch everyone enjoy your homemade treat.

Best Molds for Homemade Popsicles

Where do you get popsicles molds? Let me tell you. They’re not all created equally.

I have tried a lot of different popsicle molds in the past. We’ve tried the kind that sit upright and have reusable sticks. We always lose the sticks. And they’re difficult to remove the frozen popsicles.

But, I saw a YouTube video where someone use these flat style popsicle molds that hold a regular popsicle stick in place, so I tried some. They are wonderful. You can get a set here. They are the ones shown in the photo below and also work great for cake pops.

Everyone Loves Strawberry Banana

Strawberry banana is a timeless classic. It’s on the menu at every coffee house and smoothie shop. It’s really a no brainer. And who doesn’t love popsicles?! Put the two together and voila. Everybody will enjoy it!

Strawberries are sweet and tangy. And of course, Bananas are sweet, fruity, and creamy. Next, just add the heavy cream for a velvety smooth mouth feel and you have perfection.

Ingredients for 8 Strawberry Banana Popsicles

Strawberry Banana Popsicles with Flax Seeds

A sweet, frozen treat for summertime with lots of extra nutritional benefits added in.

Equipment

  • 1 blender
  • 1 popsicle mold
  • 8 popsicle sticks

Ingredients
  

  • 1 ripe banana
  • 5 large strawberries cored
  • 2 Tbs flax seed or meal
  • 1 Tbs sunflower lecithin also useful for baking with fresh milled flour
  • 1.5 cups heavy whipping cream

Instructions
 

  • Place all ingredients into your blender and blend til smooth.
  • Insert popsicle sticks into the slots in the mold.
  • Evenly distribute the blended popsicle batter into the molds. My molds will hold about 3 oz each.
  • Carefully place the molds into the freezer and allow it to freeze for 4 hours, or until fully frozen.
  • Gently remove from the mold and enjoy!

Notes

flax seeds are a great addition because they will mimic the  strawberry seeds. Kids will expect the texture of the seeds anyway, so you can almost trick them into eating the fall because they won’t even notice!
Lecithin is optional, but make the texture so much better. it had nutritional benefits too. If you’re concerned about buying a whole container, remember that it is a great addition to homemade bread to make it softer. It’s especially useful for fresh milled flour recipes.
