Strawberry Banana Popsicles with Flax Seeds
A sweet, frozen treat for summertime with lots of extra nutritional benefits added in.

1 blender
1 popsicle mold
8 popsicle sticks
- 1 ripe banana
- 5 large strawberries cored
- 2 Tbs flax seed or meal
- 1 Tbs sunflower lecithin also useful for baking with fresh milled flour
- 1.5 cups heavy whipping cream
Place all ingredients into your blender and blend til smooth.
Insert popsicle sticks into the slots in the mold.
Evenly distribute the blended popsicle batter into the molds. My molds will hold about 3 oz each.
Carefully place the molds into the freezer and allow it to freeze for 4 hours, or until fully frozen.
Gently remove from the mold and enjoy!
flax seeds are a great addition because they will mimic the strawberry seeds. Kids will expect the texture of the seeds anyway, so you can almost trick them into eating the fall because they won't even notice!
Lecithin is optional, but make the texture so much better. it had nutritional benefits too. If you're concerned about buying a whole container, remember that it is a great addition to homemade bread to make it softer. It's especially useful for fresh milled flour recipes.
