Fluffy Sourdough Peach Cobbler

Summer time means lots of fresh, seasonal fruit. One of our favorites is peaches! Peaches just feel like summer time, especially when you’re from the peach state. And of course, peach cobbler is a classic southern dessert. And the only thing that can make it better is a fluffy sourdough pancake batter! This recipe is so simple, you won’t believe how delicious it is.


Ingredients to make Fluffy Sourdough Peach Cobbler

1 Cup flour
1 cup buttermilk
1/2 sourdough starter
1/4 cup maple syrup
pinch of salt
2 eggs
4 peaches
3/4 cup sugar
1 tbs vanilla extract

How to Make Your Fluffy Sourdough Peach Cobbler

This recipe is pretty simple, and made in 2 parts. You’ll want to prepare both portions ahead of time and allow them both to rest for 4-8 hours. You will want to peel your peaches and cut all of the fruit off the pit. Then slice it into 1/4 inch slices. Place these juicy peaches into bowl and cover with the sugar and vanilla. Stir well, cover and set to the side.

In a separate bowl, mix all remaining ingredients together. Cover this bowl and allow it to set at room temperature for several hours to ferment the batter.

Preheat the oven to 400 degrees. Place your skillet into the oven to warm up for a few minutes. Remove the skillet and put 2 tablespoons of butter in the skillet to melt. When the butter is melted, pour the sourdough pancake batter into the skillet. Dump the peaches and syrup over teh pancake batter and distribute evenly.

Bake until the batter fluffs up and turns golden and crispy at the edges.

You can definitely use an alternative sweetener. But go ahead and cook the peaches and sweetener a bit to make the syrup. Since the sugar draws the moisture out of the peaches to create the syrup, you may not get the sauce that you want with a different sweetener.

How to store Fluffy Sourdough Peach Cobbler

Once again, I don’t think this will stick around long enough to need to store it. But, it should stay fresh in the fridge for about a week. It might freeze okay, but I haven’t tired. It’s such a delicious sourdough recipe, it gets eaten completely at the first serving.

  • 1 cup flour

Peach Filling

  • 4 peaches, peeled, cored and sliced
  • 1 Tbs vanilla
  • 3/4 cup sugar

Instructions
 

Prep the batter and peaches

  • Slices the peaches. Cover with sugar and vanilla. Make sure all peaches are coated well.

Prep the sourdough pancake batter

  • Mix all of the batter ingredients. Whisk together to remove all lumps.
  • Cover the bowl.

Allow both portions to rest.

  • Let the sourdough cobbler batter rest on the counter to ferment.
  • Allow the peaches to rest. The sugar will draw the moisture out of the fresh peaches and create a natural syrup.

Preheat the oven and skillet

  • Heat the oven to 375-400°, depending on your oven.
  • Place the skillet in the oven to preheat a bit.
  • When you're ready to combine the two portions of the recipe, take the skillet out and melt 2 Tbs of butter in the skillet.
  • When the butter is melted, pour the fermented cobbler batter into the skillet.
  • Pour the peaches and syrup over the the batter and spread the peaches around evenly.
  • Bake for 35-45 minutes. The batter will puff up into a fluffy cobbler while the peaches cook. bake until the edges of the cobbler rise over the edge of the skillet and get golden and crispy.
