  • 1/2 cup olive oil
  • 1/2 cup red wine vinegar
  • 1 red onion
  • 1/2 cup sugar

Instructions
 

  • Peel and roughly chop the red onion.
  • Add the chopped onion, olive oil, red wine vinegar, and sugar to a large-mouth mason jar.
  • Blend with an immersion blender until smooth.
  • Alternatively, add all ingredients to a blender and blend until smooth.
  • Taste and adjust sweetness or acidity if needed.
  • Store in the refrigerator and shake before serving.

Notes

Cane sugar gives the cleanest flavor.
Honey creates a thicker texture.
Store in the refrigerator for 7–10 days.
