Sweet Red Onion Vinaigrette

Instructions
Peel and roughly chop the red onion.
Add the chopped onion, olive oil, red wine vinegar, and sugar to a large-mouth mason jar.
Blend with an immersion blender until smooth.
Alternatively, add all ingredients to a blender and blend until smooth.
Taste and adjust sweetness or acidity if needed.
Store in the refrigerator and shake before serving.
Notes
Cane sugar gives the cleanest flavor.
Honey creates a thicker texture.
Store in the refrigerator for 7–10 days.
